  • Jewel's Raspberry, Chevre Cheese and Pecan Salad with Baby wild Greens

This is a real favorite at Jewel Catering. It is fresh, light and simple to make!

10 ounces Mixed Baby Greens with Arugula
1 Bunch Baby Watercress Sprigs
1 Cup Crumbled Goat Cheese
1 Cup Pecans - Halves & Pieces
1 1/2 Pints Fresh Raspberries ( when raspberries are not available - try using dried Cranberries or Cherries)

Raspberry Vinaigrette
In Blender - Add 1/2 Cup Fresh Raspberries, 1/4 cup Seedless Raspberry Jam, 1 Shallot chopped, 1/4 cup Raspberry Vinegar or Red Wine Vinegar, 1 Tbsp. Honey - Blend on Medium High for about a minute. Slowly add 1 1/2 cups Salad oil until thickened. Add the zest of a lemon to brighten the flavor.
